Save Money This Holiday with Libby's and Win!

What family isn't looking to save money this holiday season? If you've begun pricing the ingredients for your favorite holiday recipes, you might be suffering a bit of sticker shock. Luckily, there are ways to create familiar dishes with a few budget-friendly shortcuts!

Old Tradition: Shop 'Til You Drop
New Twist: You have a budget and you're ready to hit the supermarket and favorite stores. For the best deals, remember to shop early. Plan your holiday meals weeks ahead and store up on non-perishable items at the grocery store. Canned vegetables, such as Libby's, are affordable, convenience, and taste great in green bean casseroles, corn pudding, and all your holiday favorites!

Libby's and mom of 7 Hannah Keeley teamed up to bring us some delicious dishes for you next holiday get-together. Check out our favorite:

Wild Rice Pilaf

Prep time: 10 minutes
Cook time: 35 minutes

2 tablespoons butter
1 cup chopped celery
1 cup chopped onion
2 packages (4.3 oz each) long-grain and wild rice mix
1 can (8.5 oz.) Libby's Whole Kernel Sweet Corn, drained
1 can (8.5 oz.) Libby's Peas and Carrots, drained
1/2 cup toasted sliced almonds*

In a large saucepan, melt butter over medium heat. Add celery and onion; cook about 5 minutes or until soft. Add rice, seasoning packet and amount of water specified on the box (omit butter.) Bring to a boil; reduce heat, cover and simmer about 30 minutes or until liquid is absorbed and rice is tender. Add corn and peas and carrots; stir gently over medium heat until heated through. Transfer to serving bowl; sprinkle with almonds. (Serves 4).

*To toast almonds, place on a baking sheet in a 350 oven about 15 minutes or until golden brown.

The Italian Sausage, Green Bean and garbanzo bean soup really sets my taste buds tingling but so does the kicked up mac and cheese. Mac and cheese was a staple in our house when I was growing up in the 40's. One of my best memories was coming in from school on a snowy day (no bussing back then) and smellng my grandmother's mac and cheese and I am sure she would be the first to try this one.

The hamburger strogonoff sounds perfectly delish. In these days of sky high prices at the market I find myself using ground beef more and more and the best part is that when I find great recipes using ground beef like this one from Libby's they always turn out to be a big hit with the family. I have a recipe which was given to me by a Girl Scout leader friend years ago which I just tried and was astounded with how good it was.
Poor Man's shepard's Pie.
1 lb. ground beef
1 can condensed tomato soup
1 can Libby's cut green beans
3-4 cups mashed potatoes
1/2 c. shredded cheese of choice
Pan fry the ground beef, stir in the tomato soup and green beans and pour into a casserole. Top with a layer of the mashed potatoes and sprinkle with the cheese and a dash of paprika if you like. Bake at 350 degrees for about 25 minutes until potatoes are brown and the cheese melted.
