How to Make Super Moist Banana Bread

I have been trying to be better with my baking this year.  In fact, I have been taking advantage of some of the sale-priced bananas (known at our store as "antique" bananas) to make up some delicious banana bread!  I have been adapting recipes from some of my favorite cookbooks to make it more like the bread I remember as a child, but two things pretty much guarantee that any banana bread recipe will be more moist and delicious:

  • one additional banana than what the recipe calls for
  • twice the vanilla
After you've made these two small tweaks, the bread is more moist, and very sweet, especially if you do the extra trick to finish the bread out:  I let it sit in a storage bag or plastic wrap in the fridge over night before I eat it.  (My grandma used to use empty bread sacks.) 


 The next day, the bread is full of moisture and flavor -- perfect with some fresh sweet cream butter!


If you have a recipe you've always wanted to try, might I suggest going with the extracts from McCormick?  I adore their lemon extract, and the vanilla is what I use in my banana bread.  (There simply is no substitution for pure extract, in my opinion.)
