Kid's Recipe: Grilled Cheesy Broccoli Pocket with Ham

I was running late from shopping this evening and did NOT want to cook when I got home; I was also feeling the guilt of not having given my kids much for veggies today (we had stopped for fast food on the way....) Luckily, I had visited the Birds Eye website as part of a blog post I would write on their Steamfresh Veggies, and I already had a recipe in mind.  I picked up a few extra items and planned on making these Grilled Cheesy Broccoli Pockets with Ham for the kids!

Arriving home, I was pleased with my choice.  These were going to be easy.  I steamed the veggies in the microwave...


I mixed up the ingredients...



I grilled the filled pitas in my nonstick pan...


Did the kids like the results?  You bet!  



In fact, I think this will be a recipe that I use regularly in our meal plan. (While I had one kid that wasn't keen on the pita bread, ALL of the kid enjoyed the yummy filling.  We experimented with healthy dressings and condiments that we could use to give the pocket more moisture.  None of my kids objected to use of the veggies, however; I think the fact that the recipe called for a little bit of fresh apple was a pleasant surprise for the kiddos.)
