Thanksgiving Leftovers: Fried Sweet Potato Cake Recipe



While my family of 8 likely won't have much for leftovers anytime in the future, there is one dish that I seem to be the only person eating -- and there is plenty left after the holiday is over.  That dish is sweet potatoes!  Luckily, I've found a creative and yummy use for the lonely leftovers.

First, I took the equivalent of a good amount of leftover potatoes and mashed them up in a bowl.  (If you have a sweet potato "casserole" dish, with pecans, sugar, marshmallows, and whatnot, that's OK.  Just scrape off the nuts and leave everything else.)


Next you'll add the following ingredients for each 2 cups of sweet potato "mash":
  • 1 teaspoon garlic salt
  • 1 teaspoon brown sugar
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup flour
  • 1 medium egg
Mix it together real well, and prepare a skillet with a little bit of cooking oil.  Get it nice and hot on medium-high heat.

Now, drop spoonfuls of the potato mixture into the skillet, allowing them to get crispy brown on one side before turning them over.  On the second side, mash them down with a spatula before allowing the side to brown up.


Remove from heat when cooked through.  Serve immediately, so that the potato is crispy and the inside cheese is gooey!

What uses do you have for leftover sweet potatoes?  (Note: You can also use this recipe with butternut squash. You may have to add a bit more flour, depending on how loose the mixture is.)

  1. One thing I like to do with leftover sweet potato or butternut squash is to spread it on a tortilla, add spicy black beans, add cheese, top with another tortilla to make a quesadilla.
