Now that I'm making cookies for my own kids during the holidays, I wanted to recreate the memories, but with my own flavor. I baked up this Mini Monster Cookie recipe, creating smaller-sized cookies and using granola for added crunch. These cookies may have the best for flavor, texture, and overall family-pleasing potential. We had rave reviews form all the kids, especially since I incorporated Quaker® Simply Granola, which is full of crunchy granola clusters and real fruit and nuts!
You can find this cereal (which we have happily been enjoying for breakfast for a week now), in the cereal aisle of your local Walmart. It is very low sodium, is an excellent source of fiber with 34 grams of whole grains, and has 9g fat per serving. It's simple satiety!
Here's how you make these tasty, holiday treats:
- 1/2 cup butter, softened
- 1/2 cup vegetable oil
- 1 cup packed brown sugar
- 3/4 cup white sugar
- 1 cup peanut butter
- 2 eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup Quaker® Simply Granola Oats, Honey & Almonds
- 1 cup multi-colored, chocolate candies
Cream together the butter and oil, brown sugar, white sugar, and peanut butter in a large bowl until smooth. Add in the eggs, one at a time, and beat until well blended. Combine the flour, baking soda, and salt in a separate bowl. Then stir into the creamy mixture. Finally, mix in the oats and candy until just combined.
Use a cookie scoop or spoon to drop onto an ungreased cookie sheet.
Bake for 10-12 minutes until slightly browned. These keep well in a cookie jar (if they last that long without being eaten!)
I really love the crunchy, chewy, and melt-in-your mouth combo of these cookies. It's a recipe that you can customize to include any kind of chocolate candy, gumdrop, nut, or dried fruit.
