Blomkålsgratin or Blomkaalsgratin (Danish Cauliflower Casserole Dish) Recipe

As I try more and more of the old-timey recipes from my Grandmother's Danish Recipe book, I am starting to really appreciate the simple side dishes made from veggies and simple sauces or gravies. My newest fave is this awesome Blomkålsgratin or Blomkaalsgratin (Danish Cauliflower Casserole Dish). It is like scalloped potatoes, but with cauliflowers!

Blomkaalsgratin: Danish Cauliflower Casserole Recipe


To make it, you'll need:

  • 1/2 cup flour
  • 1/2 cup butter
  • 1 and 1/4 cups milk
  • 5 eggs, separate
  • salt sugar
  • pepper
  • Cauliflower (about one pound fresh, or thawed from frozen)

Start by making the sauce. I start by melting the butter in a medium sauce pan over medium heat. I add the flour and smash it up into a nice paste with a wooden spoon or spatula. Finally, I add in the milk, stirring constantly with a wire whisk. You'll have a nice white gravy now!

Allow this to cool slightly. Then, add in the egg yolk and stir to mix. Add salt and pepper to taste (plus a sprinkle of sugar, too!)

Beat the egg whites until they form stiff peaks. Fold into the sauce mixture.

In a greased baking dish, put in the cauliflower in a single layer. Then pour the sauce over. Bake at 350 degrees until the cauliflower is baked through and the sauce is thick and creamy. I didn't have a baking time in my original recipe, so I checked it after 20 minutes and then continued to bake until done.

I served it with parsley carrots and fried salt pork! You may also like some Browned Potato, too.
