Game Time Recipe: Tater Tot Nachos (Totchos)



My family loves nachos, but when I prepare them for a meal, we are hungry again in less than 2 hours.  Needless to say, it is not a filling option for a busy family.

Celebrate the game season with these easy nachos -- made with tater tots!


This recipe uses frozen tater tot (or tater puffs) in place of the corn chips, and it is a substantial meal for 5 growing boys.  Add fresh toppings to "healthy" it up!

To make this dish, you'll need:
  • 1 pound ground beef 
  • 1/2 white onion (diced)
  • 1 can refried beans
  • 1 cup shredded cheddar cheese
  • 2 cups shredded lettuce or spinach
  • 1 cup fresh tomatoes
  • Package of taco seasoning, or your own homemade seasoning (optional)
  • Sour cream
  • Salsa
Prepare the tater tots as indicated on the package.  While they are baking, brown the hamburger along with the diced onion.  Then, mix the can of beans into the browned hamburger and onion mixture.  You can add a package of taco seasoning or your own mixture of seasoning at this point.

Remove the tots and put into servings on individual plates.  Top with the meat/bean mixture, cheese, and fresh toppings.  Allow family members to add their choice of salsa and/or sour cream.
