Meal Plan Monday: Cheap Tapioca Dessert


Part of having a solid meal plan is making sure you have a list of possible snacks and desserts.  Not only does it help to keep the kids happy during the week, but you know when you shop what you need on hand to make these in-between meals dishes.  Once in awhile, I like to try a new recipe with the kids that is both simple and indulgent.  I found this Tapioca with Berries in the most recent issue of All You Magazine.  The kids (except for one) really enjoyed it!

First, I made my tapioca, according to the recipe.  I used salted butter, and it had a bit more flavor.


The berry compote was actually a thawed out container of frozen strawberries in sugar.  I completely covered the pudding when I served it.  The contrast of the warm pudding with the cold berries was amazing!


Keeping a box of quick-serve tapioca on hand can make for some very frugal and delicious desserts.  I can use up older eggs and milk and end up with affordable results.
