Simple Meals: Creamy Bruschetta Chicken

As the school year goes on, and my one-year-old insists on ripping through the house at full speed, destroying everything in his path, I'm finding it harder to get a healthy and unique meal on the table each night. We are tired of the same old dishes, but I really can't handle all the clean-up that comes with so many of the recipes being featured in magazines and online.

Walmart has taken a bold step toward keeping dinner simple (and not boring) with their collection of Simple Meals, now available on their website.  I picked one that I though my family would like most and gave it a try. The results were a fresh meal on the table in less than 30 minutes, and my kids actually ate every last bite!

Cook up this Creamy Bruschetta Chicken in minutes. Your family will love the delicious, fresh flavors!













To make the oh-so-simple yet yummy Creamy Bruschetta Chicken, you'll need:

  • 1 pound boneless, skinless chicken breasts 
  • 1 5.7 ounce package Knorr Rice Sides Creamy Chicken Flavor 
  • 1 tablespoon olive oil 
  • 1 clove garlic, chopped 
  • 2 large tomatoes, chopped 
  • 2 tablespoons fresh basil leaves, chopped 
  • 1/2 cup shredded mozzarella cheese
To prepare, simply heat oil in skillet and cook chicken thoroughly, for about 4 minutes. (I like to get a nice brown sear on one side of the chicken.) Add the garlic during the last 30 seconds. Remove from skillet, and set aside. Prepare Knorr in the same skillet according to package directions. When finished, stir in cooked chicken, garlic and tomatoes. Sprinkle with mozzarella and basil.

This dish is super colorful and pretty on a plate.  We served it with a side of fresh steamed green beans.  If you want to make a double-batch for leftovers later in the week, just add the tomatoes as you serve up the plates --- don't add it to the leftovers so you can warm it up later and not heat the tomatoes.
