Egg and Kale Breakfast Soft Tacos9:51 PM
Breakfast. It's the meal I'm most likely to skip (unless you count the times I stay up past 2 am with the baby and make a meal for myself.) I know that I should eat, but I'm just not that into breakfast foods.
This is one of my new favorite ways to get started on the right food with a savory, delicious soft breakfast taco make with colorful, vitamin-packed produce and my own farm-fresh eggs!
- Scrambled eggs
- Sauteed kale (I like it slightly cooked in a little olive oil or coconut oil on medium-high heat)
- Guacamole (the 100-calorie packs from Marketside are perfect for keeping it from turning brown if you only use part of it.)
- Fresh sliced tomatoes
- Light sour cream (optional)
- Small taco-sized flour tortillas
