Egg and Kale Breakfast Soft Tacos

Breakfast. It's the meal I'm most likely to skip (unless you count the times I stay up past 2 am with the baby and make a meal for myself.) I know that I should eat, but I'm just not that into breakfast foods.

This is one of my new favorite ways to get started on the right food with a savory, delicious soft breakfast taco make with colorful, vitamin-packed produce and my own farm-fresh eggs!

This super-simple dish requires:
  • Scrambled eggs
  • Sauteed kale (I like it slightly cooked in a little olive oil or coconut oil on medium-high heat)
  • Guacamole (the 100-calorie packs from Marketside are perfect for keeping it from turning brown if you only use part of it.)
  • Fresh sliced tomatoes
  • Light sour cream (optional)
  • Small taco-sized flour tortillas

Assemble fresh the day you eat them, and experience some breakfast awesomeness! These are also good for lunch and dinner.
