Celebrate National Hot Breakfast Month with Spiced Berry Pancakes!7:56 PM
We always seem to enjoy pancakes more in the evening after a long day of school and work. There's just something about eating comfort foods that are sweet and fluffy when you're beat! Since February is National Hot Breakfast Month, we thought we'd share one of my favorite pancake recipes: Spiced Berry Pancakes!
This recipe is especially timely, because today also happens to be National Pancake Day! So, if you missed your chance to eat pancakes this morning, you can still whip up a batch easily for "brinner" (breakfast at dinner.)
To make these, you'll need:
12 oz. bag of frozen mixed berries
3 tablespoons honey
1 teaspoon pumpkin pie spice, divided
1/4 cup brown sugar
Start by making the berry topping. Heat the frozen berries, 1/2 teaspoon pie spice, and brown sugar in a small saucepan over medium heat until hot and bubbly. Stir continually and set aside.
Make your pancakes according to the directions on the Krusteaz box and then add in the other 1/2 teaspoon pie spice and the honey. Mix thoroughly.
Cook the pancakes according to the box directions or use a pancake griddle like the one we have in the photos for perfect-sized pancakes! When done making them, put 2-3 on a plate and drizzle with the hot berry sauce.
