Easy Back-to-School Meal: Pesto Penne with Polska Kielbasa11:05 AM

One of my favorite back-to-school meals is pasta. It's a great way to fill up hungry tummies and it's super-affordable, too. With a little creativity and some quality ingredients, it's possible to get a nice pasta meal on the table within 30 minutes! It's even easier to get meal-time underway with the help of Barilla!

A meal that I just can't get enough of is Pesto Penne with Polska Kielbasa (try saying that five times fast!) My kids are also big fans! Here's what you need to make this dish:
- 1 box Barilla Pronto Penne Pasta
- 1 jar Barilla Pesto Sauce
- 1 Polska Kielbasa Link (cut into "coins")
- 6-8 Cherry Tomatoes, halved
- A Drizzle of Olive Oil
- 3 Cups Water
Start by putting the "drizzle" of olive oil into a 12-inch skillet. Turn it to medium high heat and add the Kielbasa. Cook just until browned, remove from skillet, and set aside. Now you can prepare the penne according to package directions:
Pour the entire box into the skillet. Add 3 cups water (enough to cover). Cook on high for 10 minutes, constantly stirring, or until all the water is absorbed.
Stir in Kielbasa and 1/4 cup of the pesto sauce (more to taste, if you'd like.) Serve immediately.
For added flavor, you may also like topping it with the fresh tomatoes or a bit of pine nuts! (The pine nuts give it a lot of extra texture!) No matter what you add, I'm pretty sure your kids will like the 100% natural pesto sauce -- it's savory and fresh-tasting!

It's really made things easy for us at our house -- which gets busy with 8 of us trying to balance homeschool, farm life, and working from home. With no need to have have separate pans for your pasta, sauce and other ingredients, it simplifies the dish routine, too. One pan, no need to boil, and no messy draining! How convenient is that?
