I love coffee drinks. Blended ones are my favorite, and I've tried hundreds of combinations of toppings and flavorings over the years. It seems that no matter how many I've tried, however, I always return to my all-time favorite: Caramel Macchiato.
Since there is no coffee house for 20 miles, however, it's become so important to be able to make the same quality of drink at my home -- any time I crave it. The International Delight Iced Coffee drinks you can buy in the refrigerator section of your local Walmart (in the juice section) are so creamy and sweet - they make it easy for me to grab a drink anytime, day or night, from my fridge! You can pour it over ice in seconds, for a drink you can enjoy at home or on the go.
My favorite way to enjoy it is in my own recipes, which usually involve blended with ice. I don't use just any ice; I make cubes from the International Delight Iced Coffee drink, then blend that with the drink, topping it with some whipped cream and some finely chopped caramel toffee peanuts. Whenever I make a glass of this, my husband always wants one, too. So I keep two of the cartons of the Iced Coffee on hand, since I know I'll be making so many!
I love that this recipe can be customized with your choice of topping (sprinkles, chocolate drizzle, or even coconut flakes!) I like to keep little containers of my favorite toppings in one section in my fridge at home to quickly grab and give my coffee drinks whatever flavor I'm in the mood for.
