DIY Garden Recipe: Mock Lime Green Tomato Jam

My house is overflowing with green tomatoes. As with every fall, my son brings in all the tomatoes he can before the first freeze. This time, we had 6 big copy paper boxes! While we ripened some and made fried green tomatoes with others, there were still lots to eat up. In addition to making my favorite green tomato cake, we whipped up some mock lime green tomato jam!

This tasty recipe uses green tomatoes and gelatin to create a mock lime jam


This is such an easy recipe.  You'll need:

  • 5 cups green tomatoes (diced)
  • 5 cups sugar
  • 1 box lime gelatin

Mix the sugar and tomatoes together and heat in a giant saucepan on the stove at medium to medium high heat until simmering. The sugar will turn clear, and it will start to bubble. Continue cooking for 20 minutes, stirring as needed. Turn down heat, stir in gelatin powder, then resume heating at medium heat for another 15 minutes. Remove from heat and spoon into jelly jars.

This recipe hasn't been tested as safe for canning, so I would recommend keeping it in the fridge in glass mason jars or freezing it. If you freeze it, these work quite nicely.
