Zucchini Meatloaf with Mushroom Sauce over Rice


I have an abundance of very large zucchini's that the kids don't want to eat.  Today, I shredded part of one and made a meatloaf out of it.  Here is what I did:

Zucchini Meatloaf Recipe:

2.5 pounds lean ground beef
2 eggs
1 cup shredded zucchini
1 cup bread crumbs (I use the hot dog buns from the reduced bakery section at my grocer, ground up in my mini food chopper)
salt and pepper
1/2 cup ketchup

Mix it up and form into small meat loaves or meatballs.  Cook in a 400 degree oven for about 30 minutes, or until cooked through.  Then, top with Progresso Recipe Starters Creamy Portabella Mushroom Cooking Sauce and put back in the oven for about 10 minutes.  Serve over rice.



The kids loved this dish, and the cooking sauce made it easy to create good flavor.
