Easy Cheesy No-Crust Skillet Quiche Recipe


Last month, our family was introduced to Beneforté broccoli.  I had a little left in the fridge (the kids really did gobble quite a bit of it up raw), so I thought I'd make some quiche.  There's just one problem:  the kids HATE the crust of most quiches.  One other problem?  My oven was on the fritz.  I decided to do a quiche in the style of an omelet, using my favorite quiche ingredients!

For this recipe, you will need:

  • 1 cup broccoli, cleaned and cut (Beneforté is ready to go right out of the bag!)
  • 5 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1 cup shredded low-fat cheese of your choice
To begin, mix all the ingredients into a mixing bowl.


Pour into a medium-high, non-stick skillet large enough for the entire mix.


Once the egg mixture starts to cook along the bottom, try to "part" the eggs down the middle.  It may take a little more cooking, if you can't do it right away.


Once the eggs have been parted in two, flip each side with a large, flat spatula.


Continue cooking until the eggs are cooked all the way through.  The broccoli should be tender but firm.   Serve on a plate with fruit!
