Gluten Free Cherry Sour Cream Muffins

We are not a gluten-free family, but that doesn't mean we don't like to try out new recipes and mixes!  With Kristen's Gluten Free just a country mile or so down the road from us here in Tekamah, NE, it only made sense to whip up a batch of muffins using one of their mixes: The Cherry Sour Cream Muffin Mix, to be exact.

This was a breeze to mix, using ingredients I had on hand.  It had two separate mixes inside: one for the batter and one for the streusel that goes on top!

These were perfect from the oven, and my family ate them up!  We also had them for breakfast the next day-- that's how big the batch was!

For a yummy gluten-free option for snacks, breakfast, or coffee with a friend, this is your mix. I'm not a big fan of most gluten-free mixes on the market, but I honestly couldn't tell this wasn't made with regular flour. (This mix is made with sorghum and tapioca flours and raw sugar.)  Perhaps it was the yummy crunchy top or the big, fat cherries inside!
