Easy Pierogies with Bacon and Kale in Cream Sauce

Pierogies. The perfect pasta filled with mashed potatoes. 

I love them ever since I tried them last year, and they've become a fun change-up from traditional pasta dishes that take just minutes to prepare!  This easy dish is full of flavor and even has some green stuff, too!

This Easy Pierogies with Bacon and Kale in Cream Sauce takes just minutes to whip up!

To make it, you'll need:

  • 1 bag frozen pierogies
  • 1 cup chopped fresh kale
  • 1/2 pound fully cooked bacon, crumbled
  • 2 tablespoons butter
  • 1 cup heavy cream (or choose milk for a lighter option)
  • 1 tablespoon flour
  • salt and pepper to taste

Start by preparing the pierogies according to the instructions on the package.

While the pierogies are cooking, create the sauce by heating the butter over medium-high heat in a sauce pan. Once it's fully melted and sizzling, add the flour and stir quickly until it becomes a paste. Slowly add in the cream or milk and continue stirring vigorously until thickened. Turn down the heat and set the sauce aside.

In a separate sautee pan, wilt the kale with a dab of olive or coconut oil. You can do this by getting the oil very hot, then adding the kale and stirring quickly until it turns darker green and shrivels up. Add the bacon and continue to stir for one minute.

Plate your dish by layering the pierogies, then the kale/bacon combo, then drizzling with sauce. This is delicious served immediately!
