Summer Recipe: Lemon Garlic Chicken with Green Beans

If there's one thing I love about summer meals and entertaining, it's the fact that I have so many fresh ingredients to work with. We eat quite a few meals that are made up of simple proteins paired with a lightly steamed veggies and some rice or potatoes on the side. This summer, I was a big fan of the green beans that came out of our garden. This recipe, made fabulous with the Lemon Garlic Dressing from Tessemae's is so quick to make -- just 20 minutes!

You'll need:
  • 1 pound boneless, skinless chicken breasts, cut into tenders
  • Tessemae's Lemon Garlic Dressing (1/2 cup)
  • 1 pound fresh green beans, cleaned and snapped
  • 1 tablespoon olive oil
Put the olive oil in a skillet and heat on medium-high heat for 30 seconds before adding in the chicken. Cook the chicken for 2 minutes on both sides, then add in the dressing and green beans. Continue cooking until chicken reaches an internal temperature of 165 degrees F and liquids run clear. Serve with your choice of starch (I love red-skinned mashed potatoes!)
