MealPlan Monday: Scalloped with Ham, Peppers, and Onions



So, the ham that we bought for the Christmas dinner at my Grandma's didn't get eaten -- we all had the flu.  Now that we're better, however, our tummies are finding it hard to get filled, and that ham is looking pretty good!  In addition to sandwiches eaten between the main meals of last week's meal plan, we put some aside for a tasty Scalloped Potatoes Dish, inspired by this Gooseberry Patch recipe.  We  baked it as directed, but added twice as much ham, a green pepper, a yellow pepper, and 1/4 cup diced red onion.  We also skipped the frozen corn and the bread crumbs.  It made so much, we will be eating it AGAIN this week.
