Make it With a Mix: Cherry Pecan Muffins



I love the thought of making things from scratch, but I really don't have the time.  I also have come to rely on some of my favorite brands of pantry items to help out in a pinch.  One of those is the Augason Farms Buttermilk Biscuit Mix (without leavening).  It comes in handy for quick muffins!

To make these Cherry Pecan Muffins, you'll need:
  • 2 cups Augason Farms Buttermilk Biscuit Mix
  • 1 tablespoon + 1 teaspoon baking powder
  • 1/3 cup + 2 tablespoons sugar
  • 2/3 cup skim milk
  • 2 tablespoons coconut oil
  • 1 egg
  • 3/4 cup fresh cherries, halved and pitted (or frozen will work, just thaw them first)
  • 1/2 cup whole pecans (I used Sante brand)
Mix the iingredientstogether, except for the cherries and nuts.  Fold in cherries (do not overmix.) Pour into greased baking cups, or use these silicon baking molds that I find to be easier.  Add 2 pecans to the top of each muffin.  Bake at 400 degrees for 17 minutes, or until the tops are golden brown.
