I love the thought of making things from scratch, but I really don't have the time. I also have come to rely on some of my favorite brands of pantry items to help out in a pinch. One of those is the Augason Farms Buttermilk Biscuit Mix (without leavening). It comes in handy for quick muffins!
To make these Cherry Pecan Muffins, you'll need:
- 2 cups Augason Farms Buttermilk Biscuit Mix
- 1 tablespoon + 1 teaspoon baking powder
- 1/3 cup + 2 tablespoons sugar
- 2/3 cup skim milk
- 2 tablespoons coconut oil
- 1 egg
- 3/4 cup fresh cherries, halved and pitted (or frozen will work, just thaw them first)
- 1/2 cup whole pecans (I used Sante brand)
