Simple Meals Recipe: Easy Mini Runzas with Pepperjack Cheese

9:40 PM

If you live in Nebraska, you know what a Runza is. And while there is a restaurant chain that makes homemade runzas so delicious, it's not always practical to take everyone out to eat.  We've developed a simple version of the runza, based on a recipe that's been around for generations.  This savory meat and cabbage filled dough has extra zing with the addition of pepper-jack cheese!

To make this simple meal that makes 8 Runzas, you'll need just a few basic ingredients:

  • 1 bag of cabbage slaw mix (don't have any? One quarter small cabbage and half a carrot, both shredded, will do)
  • 1/2 pound hamburger, browned
  • 1/2 white onion, minced
  • 1 clove garlic, minced
  • 1 tube Pillsbury GRANDS! biscuits
  • 1 cup shredded pepper-jack cheese (we prefer Tillamook)
  • salt and pepper to taste
Start by browning your hamburger. Add the onions, garlic, and cabbage/carrot mix and cook until the veggies are soft.  Salt and pepper to taste. Set aside to cool while you prepare the dough.

On a flat surface (a pie board works well), roll out each individual biscuit into a flat oval.

Transfer to  your greased baking sheet and fill with 1/4 cup of the meat mixture and cheese. Fold up and pinch the edges.

Bake in a 350 degree oven for about 17 minutes or golden brown.

When baked, serve with ketchup, just like a real runza!
