Simple Mother's Day Lunch: A Better Egg Salad Recipe

I absolutely love egg salad, especially since I can make them with my farm fresh eggs. I usually use commercially-prepared mayo with them, but I have tried a new mayo that has completely blown my mind. It's so rich, creamy, and natural-tasting, that I've now used it -- not only in my egg salad -- but in all recipes requiring mayo.

Whip up this tasty egg salad for Mother's Day lunch!

Here's what you'll need:
  • 6 hard-boiled eggs, finely diced
  • 1/4 cup Just Mayo, regular
  • 2 tsp fresh lemon juice
  • 1 tbsp minced onion
  • salt and pepper to taste
Mix ingredients, chill in the fridge for an hour and serve on warm croissants or lettuce leaves! It's a tasty Mother's Day lunch that requires very little effort and is very flavorful.
