Simple Mother's Day Lunch: A Better Egg Salad Recipe11:15 AM
I absolutely love egg salad, especially since I can make them with my farm fresh eggs. I usually use commercially-prepared mayo with them, but I have tried a new mayo that has completely blown my mind. It's so rich, creamy, and natural-tasting, that I've now used it -- not only in my egg salad -- but in all recipes requiring mayo.
Hampton Creek's Just Mayo is a beautiful blend of non-GMO, gluten-free, soy free, dairy-free, lactose-free, and naturally cholesterol-free ingredients. It is not made from eggs, but pairs so well with my own farm fresh ingredients!
Here's what you'll need:
- 6 hard-boiled eggs, finely diced
- 1/4 cup Just Mayo, regular
- 2 tsp fresh lemon juice
- 1 tbsp minced onion
- salt and pepper to taste
