Atkins isn't Just for Dieters....

Watching carbs may be the secret to slim success, but I'll never do it willingly. With an opportunity to try some new Atkins branded products, I learned a little bit about what I love about carbs, and how I can have something similar with less consequences.

We sampled the new Atkins Penne Pasta, and really it tasted just like regular pasta. A bit more firm than I had expected (like true al dente), it was super filling and yummy with my regular sauce. (The kids didn't know the difference.)

The Atkins All-Purpose Baking Mix was a bit of a different story. Not bad tasting, it took some practice to master. Since it is made from soy, it had an odd color and couldn't be substituted for my regular baking mix without some adjustments. After about 20 horrible-looking mulberry pancakes, I figured out that I had to cook them on a lower heat and for longer (they weren't flipping very nicely.) Once it got done right, however, they were pretty yummy :)
