Mom Moments: How Do You Maintain a "Healthy" Lifestyle? Day 2

Today I'm starting to meal plan. Yes, you heard me. I've been a lurker at several great blogs, including $5 Dinners for over a year, and while I sometimes create a menu plan on Sunday night, I never make it past Tuesday on track. Today, I went through many healthier recipes that also looked delicious, and I looked for ways to freeze or store them so I could cook once, but eat several times from the same batch.

I'm starting with this recipe.


I picked spinach from my fall/winter garden, boiled up some rice, and chopped garlic. Should be tasty! (And much healthier than the Doritos I was scarfing earlier today.)

Yes, the rice is a bit sticky. I'm kind of a fan of sticky rice, however. :)
