Even though I didn't post about it then, I didn't completely miss out on American Heart Month. In fact, Campbell's gave me some recipes to try, along with a few products to be used for ingredients. To be honest, my family didn't like some of the more "gourmet" meal ideas. We decided to adapt a favorite recipe of our own to be more heart-healthy, however, and we were thrilled at how Campbell's fit nicely into the mix.
Our version of Spicy Sausage Stew is really simple.
You simply brown one half pound of your choice of low-fat Italian sausage (chicken or pork) in a stock pot with two cloves of diced garlic. Then break it up into crumbles, drain the fat off, and add the following ingredients:
1 can V8 Spicy Hot
3 cups shredded green cabbage
3 shredded carrots
2 stalks of diced celery
2 diced red potatoes (with skins on)
1 can rinsed red kidney beans
2 cups water
Cook over medium heat for 30 minutes, or until the cabbage is tender. Add pepper to taste.
My family really enjoyed this meal with a nice crisp side salad. It's filling, low in fat, and high in fiber! I'm now inspired to use V8 products in a few more meals. What about you?
