Cheesy Seafood & Sweet Corn Wraps Recipe


There are times I don't quite get a good meal during the day (blame it on my workaholic tendencies), so I decide to "rustle up" something yummy at night.  I threw together this dish with some leftover fresh sweet corn that we had grilled earlier in the day.  It was simple and delicious!

Cheesy Seafood and Sweet Corn Wraps

Ingredients:
  • 1 flour tortilla
  • 1/2 cup mock crab meat flakes
  • 1/4 cup sweet corn (fresh is best!)
  • 1/2 slice Velveeta Queso Blanco cheese 
To prepare, lightly sear the seafood flakes in a teeny bit of oil in a skiller (I prefer olive oil.)  After the meat gets a few grill marks on it, stir in the sweet corn until hot.  Remove from the skillet and spoon into a warm tortilla.  (My microwave is on the fritz, so I just gently laid the tortilla on the top of the mixture while it cooked for a few seconds.)  Slice the 1/2 slice of Velveeta into thin strips and place on top of the meat mixture.  Fold over and enjoy!

You can add some fresh stuff (lettuce, tomatoes, salsa) for even more flavor!
