Grilled cheese sandwiches are my go-to "Oh, no! I don't have anything thawed out for lunch" solution. My kids tire of the traditional method, AND our garden is overflowing with fresh tomatoes, so this week, I made these beautiful sandwiches:
Garden Tomato and Grilled Cheese Sandwiches
Ingredients:
Prepare like any grilled cheese. (Spread the butter or margarine lightly on one side of each piece of bread, with the butter side facing OUT. Then fill the sandwiches with one big slice of fresh tomato, cheese, and tiny pieces of fresh basil.) Then eat with a fresh garden salad, homemade tomato soup, or a nice pasta salad!

- Slices white cheese (swiss, queso blanco, or white American work well)

- Fresh Basil
