Mac-and-cheese Stuffed Peppers Recipe

Do you have an obscenely large stack of recipe books in your cupboard?  Are you a hoarder of "clippings" from magazines with extravagant food ideas you'll likely never use?  I am guilty of both of these practices, and yet, I still end up making the same old recipes!

Yesterday, I surprised my family with a new recipe that I though they'd enjoy.  It was Macaroni and Cheese Stuffed Peppers!

The premise was simple. Create a yummy meal for our family with just four ingredients!

You'll need:

  • Kraft Homestyle Macaroni and Cheese
  • green peppers
  • Oscar Meyer Fully Cooked Bacon
  • Sprinkled Parmesan


These easy macaroni and cheese stuffed peppers are a modern take on a classic dish. The kids love this recipe!

The process was simple. Start by halving, seeding and boiling the peppers for 8 minutes in a pot of water. (I used extra large peppers and was able to make over 6 servings -- the kids cut each pepper half in half again after they were finished cooking.) Set aside to drain.


Then, you prepare the Kraft Homestyle according to package directions.

After stuffing the peppers with the pasta, sprinkle with the crumbled bacon and Parmesan. Bake them in a 350 degree oven for 12 minutes, or until the top is golden brown. These are amazing!
