Celebrate Cinco de Mayo with Goya Olive Oil and Quinoa in a Healthy Dish!


I admit that I've never made quinoa.  I tried it one time, but didn't like the way it was prepared.  When goya sent me a complimentary bottle of their olive oil and a bag of quinoa to try out a healthy meal option, I was a bit stumped.  I played around with a few ingredients I had in my pantry and came up with a pretty decent dish that my husband and kids loved!


To create this slightly spicy cilantro-seasoned dish, you will need:
  • 1 cube spicy chicken bullion (or plain chicken buillion with chili pepper for flavor)
  • 4 cups water
  • 1 cup Goya quinoa (rinsed and drained)
  • 1/8 cup Goya olive oil
  • 1/8 cup diced green onions
  • 1 teaspoon finely diced fresh cilantro
Heat the olive oil in a medium sauce pan over medium heat.  Add the quinoa and brown slightly.  Then add in the water and chicken bouillon, heating over medium high heat until boiling.  Reduce heat to simmer, cover, and heat until the quinoa has absorbed the water (or about 12 minutes).  Stir in the green onions and cilantro and service while warm!  This is also great with a few fresh tomatoes stirred in.
