I admit that I've never made quinoa. I tried it one time, but didn't like the way it was prepared. When goya sent me a complimentary bottle of their olive oil and a bag of quinoa to try out a healthy meal option, I was a bit stumped. I played around with a few ingredients I had in my pantry and came up with a pretty decent dish that my husband and kids loved!
To create this slightly spicy cilantro-seasoned dish, you will need:
- 1 cube spicy chicken bullion (or plain chicken buillion with chili pepper for flavor)
- 4 cups water
- 1 cup Goya quinoa (rinsed and drained)
- 1/8 cup Goya olive oil
- 1/8 cup diced green onions
- 1 teaspoon finely diced fresh cilantro
