I'm not a big lemonade fan, but my kids are always asking for it -- especially the Kool-Aid brand. Since there are many varieties (lemon/lime, lemonade, and pink lemonade), I thought it would be fun to try a Kool-Aid cupcake made from the drink mix!
I took a basic white cake mix from Walmart, mixed it according to the directions, and separated the mix into two bowls. Then, I added one packet of lemon/lime drink to one bowl, and one packet of pink lemonade to the other. After mixing each flavor separately, I put them side-by-side into a cupcake liner using spoons.
Then, I baked as directed.
Later, I mixed up one jar of marshmallow fluff with some yellow food coloring added for color. I topped the cooled cupcakes with it.
What did we think? I'm not a big lemonade fan, so these just weren't my cup of tea (er, lemonade.) The kids, however, went WILD for them. They said they tasted like sherbet and had no problem scarfing down several. If I were to do these for adults, I would play around with different flavors (maybe cherry or strawberry, instead) and do 1/2 packet per color, instead of a full packet. The marshmallow fluff was a good choice to cut through the citrus flavor!
