Nothing tastes better on a summer afternoon than a grilled chicken breast. I've avoided making them for years, mostly because mine always came out dry and unevenly cooked. It turns out, I was doing it wrong! After some research and practice, however, I've come up with a fool-proof way to grill up juicy, tender, and flavorful breasts with no trouble. You can use this method on a gas or charcoal grill, or even in your oven's broiler!
The video below has all the details (except for the grilling part, that's up to you.) Basically, you will pound the breasts thin, marinate in a simple brine recipe, and then serve with fresh veggies and greens.
1. Wrap the chicken breasts in plastic wrap and pound to 1/4-1/2 inch thickness with the flat side of a meat tenderizer or a rolling pin.
2. Soak in a brine for 30 minutes. I use a solution of 8 cups water to 1/4 cup white sugar and 1/4 cup kosher salt.
3. Grill on a hot, clean grill. Spray both sides of the breast with olive oil to keep from sticking!
