Easy Weeknight Dinner Idea: Taco Melts



I cook most every meal in our home.  Most of the time, I prefer to took from scratch, by using a combination of freeze-ahead components, batch cooking, and fresh ingredients.  Sometimes, however, the only way I can get through my week and keep the meals imaginative during the busy school year is by using some convenience foods as ingredients.  One of my favorite products is the Pillsbury Grands! Biscuits.  I especially love the Flaky Layers varieties!

In addition to making easy components for quick dinners, the folks at Pillsbury also have a pretty decent collection of recipes.  I chose these Taco Melts for a recent quick dinner option, and they went over very well!

I made a few adjustments, but this basic recipe will need:
  • 1 lb ground beef
  • Taco Seasoning
  • 1 tube Pillsbury Grands! Biscuits
  • Shredded Cheddar Cheese
  • Salsa
To make these, simply brown the ground beef and drain.


Then, add the taco seasoning per the package directions (or make your own seasoning, like I do).  Add in just enough salsa to make the meat mixture moist and slightly saucy.

Now, you will separate the biscuits, flatten them to 6-inch rounds (using your hands or a rolling pin) and scoop the meat mixture on one half.  Add the shredded cheddar cheese to your liking, and fold the biscuits over to seal.


Now, bake in your oven for about 10-12 minutes on 375.  These will get nice and brown on the outside and gooey on the inside.  Serve with sour cream and salsa (or make your own fresh salsa!)


My family really enjoyed these.  They were pretty simple, too.  For extra busy evenings, I think I will have some frozen seasoned ground beef on hand so that I don't have to mess with it.
