We always have potatoes in our house. They are an easy staple food to work with, and -- late at night -- it's easy for me to pop one into the microwave to have a baked potato for my pregnancy cravings. With family time getting harder to coordinate during the school year, I find a versatile food like potatoes to be an easy way to incorporate starches into our meals.
