Meal Plan Monday: Crockpot Meatloaf and Potatoes

It's been awhile since I've done a meal plan; our oven/stove conked out on us, leaving me scrambling to prepare meals with just counter-top appliances.  Since we also just had two cows butchered, we were drowning in beef.  (The cows were older, requiring special treatment of the meat. I'll be sharing some ways to do this in later articles).

While cruising around on Pinterest (my new favorite search engine), I found a few crockpot recipes for using hamburger, but many required the beef be cooked prior to putting it in the pot.  One idea was to make up a meatloaf and cook it in the pot, and include baked potatoes.

Essentially, you make up your meatloaf, place it on the bottom of the pot, and add the foil-wrapped potatoes (scrubbed and poked before you wrap) on top.  I also added a little bit of water in the bottom, since my meat is so lean, as well as a few carrots and celery for flavor.  (If you're not going to eat these veggies, the "scrappy" ends work well, as do the leaves of the celery.)

Cook on high for 4-5 hours or low for 7-8.  The meat will be very moist, and the potatoes will have a lovely golden brown color and flavor that your family will enjoy very much!
