Game Time Recipe: Bacon and Beef BBQ Meatballs



Woot! The Big Game is almost here, and that means I can get creative in the kitchen with yummy finger foods and messy snacks that only my husband and I can eat in front of the TV. (The kids have to eat in the dining room.)  I love meatballs, and since we have a freezer stocked full of very lean, grass-fed hamburger, I thought it would be delicious to add in a little fat and create the perfect BBQ meatball.  Well, I think I did it!


To create this crowd-pleasing dish, you'll need the following items:
  • Oscar Meyer Fully Cooked Bacon (it's the perfect texture for this recipe)
  • 2 pounds lean ground beef
  • 1 cup Panko bread crumbs
  • 2 eggs
  • Salt and Pepper to Taste
  • BBQ Sauce (I created my own from this delicious recipe)
To begin, grind up the bacon in a blender or food processor.  (My Ninja Ultima made quick work of this.) Mix it into the ground beef until thoroughly blended.


Add in the eggs, panko, and salt and pepper.  When it's consistently mixed, roll into party-sized meatballs.  (Remember, the smaller the balls, the more people you can feed.  People feel guilty about eating too many meatballs.)


Bake in a 350 degree oven for 30 minutes, or until the juices of the meatballs come running out.  Use a meat thermometer if you're not sure.


Slather in your favorite BBQ sauce and put back in the oven for about 5 minutes, turning the heat down to 200 degrees.


These are soooo tasty.  They have a pork flavor, much like a ham ball, but they have the density of a good beef.  These are perfect for parties, and can be made ahead of time and kept warm in the slow cooker!
