Meal Plan Monday: Rainbow Hash


This week, my goal is to clean out the fridge and use up small amounts of whatever I have left in the fridge and freezer.  This makes my meal plan a bit difficult, but we'll have room to hit Sam's Club when I'm done!

This week, we'll have one of my favorite meals, potato hash.  I usually use potatoes, onions, and ground beef, seasoned and fried in a skillet until done.  I had some cabbage, carrots, and purple potatoes (from our garden) on hand, however, so I used these instead.


I cooked all the veggies until crispy on the outside and tender on the inside.  I added some cooked ground beef in the final moments so it wouldn't get soggy.  This was a hit with the family!


I'll also be making some snack foods and "nibbles" for Game Day, making my meal plan a little wonky.  Here is what I know I'll be making, however....

Monday
Rainbow Hash (with extra veggies, including spinach that needs used up)
Canned Peaches

Tuesday
Grass Fed Sirloin and Tossed Greens Salad with Mandarin and Green Onion Dressing
Crusty Bread

Wednesday
Meatless Goose Egg Bacon and Cheese Wraps
Fruit Salad

Thursday
Bacon and Beef Meatballs with BBQ Sauce
Mashed Potatoes
Steamed Green Beans

Friday
Sirloin Chili
Cornbread

Saturday
Red Beans and Rice with Sausage
Fried Cabbage

Sunday
Game Day Goodies!
