Meal Plan Monday: Sloppy Cornbread Casserole


Sometimes, I see a freezer meal in my deep freeze that I really don't want to make (but it needs to be used up.)  Or, I don't have all of the ingredients on hand to make it.  I repurpose it to make it seem like a "new" meal, even though it's really the same meal I made before, presented in a new way.  That's the case with the bag of sloppy joe meat I pulled out of the freezer for this week's Neat Sloppy Joes.  I didn't have any pie crust on hand, so I used a cornbread mix to make it into a casserole.  This went over pretty well with the kids.

I thawed out the Sloppy Joe Meat.  (Recipe can be found at here, or use your own recipe.)  I warmed it up in a skillet and spread it out in a baking dish.


Then, I mixed up a cornbread recipe (I use Martha White's self rising mix) according to the package directions, added one can of creamed corn, and poured that out over the meat.



I baked the whole thing in a 450 degree oven until the bread was baked through, and it was pretty delicious!  You could also add cheese to the top in the last 5 minutes of baking.
