Meatless Goose Egg, Bacon, and Cheese Wraps


We have just gotten our first goose egg of the year!  Since our lady goose only produces eggs for 2 months out of the winter, we don't take these beauties for granted. In fact, I used the first egg up right away -- feeding 4 people with just the one egg.

Here is a photo of our goose egg (left) compared to the jumbo chicken egg (right).


I whipped up a yummy meatless wrap that tasted like a bacon, egg, and cheese burrito. Here's how I did it:

1.  Crack the goose egg, being careful not to shatter the shell too much.   The shells are very tough.  They need a little prying to open!


2.  Mix the egg with 1/8 cup milk, salt and pepper to taste, and a spoonful of vegetarian bacon bits.  I prefer the Augason Farms dehydrated bits as they keep in the pantry for up to a year after being opened.


3.  Scramble in a pan like you would regular eggs.


4.  Lay out on a warmed tortilla and add fresh chopped tomato and shredded mozzarella cheese!
