I've been so busy with the new baby and plans for our spring garden, that my meal planning has gone by the wayside. I do have some pretty strict guidelines about what makes up a complete and healthy meal, however, and one of them is that there needs to be some kind of whole grain and a vegetable. Today, after an especially exhausting morning, I realized we had few clean dishes and a messy dining room table (full of homeschool supplies.) It was definitely a sandwich day.
By piling on a low-fat lunch meat (like turkey breast), some fresh spinach leaves, and a low-fat cheese on a piece of bread, I had one of the healthier meals the kids would get this week. And, because the weather was nice, they could eat it outside. Having some Roman Meal bread on hand made it significantly more filling and delicious!
