I love cheesy potatoes. My husband does not. He does, however, like potatoes in his tacos and burritos. I used this to create a dish that we both liked, and it took just minutes to prepare!
To make this cheesy taco potato bake, you'll need:
- 1 1b. bag frozen diced potatoes (the ones for breakfast work well)
- 2 lbs ground beef
- 1 cup shredded cheddar cheese
- 2 packets taco seasoning, or make your own!
- 2 cups crushed corn chips
Prepare the dish by greasing a glass casserole pan. Preheat the oven to 350 degrees. Brown the hamburger until done, and add in the taco seasoning according to the package. Or, use about 2 tablespoons chili powder, 2 tablespoons cumin, and liberal amounts of garlic salt and pepper.
Spread the hamburger out in the bottom of the dish. While the hamburger is cooking, you can fry the frozen potatoes in a skillet with about 1/8 cup vegetable oil. (If you use coconut oil, your potatoes will not brown nicely.) Cook thoroughly, turning the potatoes once or twice until they are cooked through. If the potatoes get mushy, that's OK. Seasoning them with garlic salt and pepper and spread them over the hamburger mixture.
Top the entire mixture with the shredded cheese, then the corn chips. Bake in the oven until the cheese is bubbly and the chips golden but not burnt.
I served this in small dishes and topped with salsa, shredded lettuce, and sour cream. You can also top with green or red onions or avocado and olives. It's a very easy dish that isn't too cheesy but is very delicious!
