Start the New Year Right: Greek Yogurt Cream Cheese and Kale Breakfast Sandwich


Ever since last month, my hens (all 50+ of them) have started laying again, and we now have eggs coming out of our ears!  One of the ways I've been able to use them up in a healthy and delicious way is to use my Breakfast Sandwich Maker to give the kids their own individual sandwiches each morning.  While it's easy to pull together, we crave variety, and I have been playing around with different flavor profiles to have us really looking forward to breakfast!

One ingredient that has worked very well is Green Mountain Farm's Greek Cream Cheese, which I have used for over a year as a very delicious alternative to traditional cream cheese.  The product is made by Franklin Foods, from locally sourced milk and cream, and then produced to form a perfect blend of Greek Yogurt and cream cheese. (You would expect that it would be only available at a specialty store -- but it's actually at your local Walmart store!)



Why might you choose to use this instead of a typical cheese or cream cheese? It has 4 times the protein and 1/2 the fat of regular cream cheese, plus, it contains live and active cultures!

I created my own recipe for this quick and easy sandwich in just 5 minutes.  You'll need:
  • 2 tablespoons Greek Cream Cheese
  • 1/8 cup sauteed, chopped kale
  • 1 egg, wisked lightly and seasoned with salt and pepper
  • 2 slices of bread (Any kind will do. I like using the dry ends of my older loaves of bread.)
First, remove the crusts from your bread. If it is a larger slice, be sure it small enough to fit into the sandwich maker.  Spread the cream cheese on one of the slices, and place it cheese side up in the bottom of the sandwich maker.

Put the second compartment of the maker down and pour the egg into the well.  Add the kale, and place the second piece of bread on top. Close the sandwich maker and cook for the full 5 minutes.

When done, you'll have a creamy sandwich bursting with flavor.  The kale, egg, and cream cheese make it a nutrient-rich breakfast option that is both filling and perfect for starting a busy day!

  1. I am looking out for some unique breakfast recipes for my son. He doesn't take breakfast very well. I had to keep pushing him to dig it down, until I found this breakfast on the run dish from a catering service nearby . This actually put an end to all my worries. Now I feel relaxed and happy. This breakfast sandwich seems interesting and simple. I will definitely give it a try!
