Sweet Potato Cream Cheese Danish

I'm such a Danish fan. I love the flaky layers of the dough.. and the sweet, creamy filling. I could seriously eat them for breakfast, snack, or dessert. I'm over the moon for them!

I also get a little bored with the same old flavors, so I thought it would be fun to do a seasonally delicious version with canned sweet potatoes!

This is super easy to put together. You'll need:

  • 2 cans of Great Value crescent rolls
  • 8 oz. of cream cheese (I prefer the Franklin Foods Greek Cream Cheese, Whipped)
  • 1 cup white sugar
  • 1 egg yolk
  • 1 egg white (yes this is the same egg, separated)
  • 1 tsp vanilla
  • 2 cups Princella or Sugary Sam's canned sweet potatoes (mashed)
  • a pinch of apple pie spice

Preheat your oven to 350 degrees. Lay one tube of crescent rolls out in the bottom of a glass baking dish. (Or, use 2 round ones, like I did and use HALF of one tube in the bottom of each)

Mix together the cream cheese, sugar, egg yolk, vanilla, and mashed sweet potatoes.  The cream should be smooth, but it's OK to have a few tiny sweet potato "chunks" in it.

Spread the cream mixture over the crescent rolls.

Top with remaining rolls, leaving a little space for the cream to show through here and there.  Brush some of the egg white on the top, then sprinkle with the pie spice.

Bake in the oven for about 12 minutes or until golden brown.  (Really watch!) Remove and allow to cool for 5 minutes.  Serve immediately.

This had such a uniquely sweet flavor. My kids really ate it up!

You can find the Princella or Sugary Sam (depending on your region of the country) sweet potatoes at your local Walmart!  This is perfect for an afternoon coffee dessert......
