Create an Easy Garlic Artichoke Zucchini Pasta Recipe with the Veggetti Pro!

We gave it a try this week, and created a simple, yet nutritious garlic artichoke zucchini pasta dish!

First, we took the Veggetti Pro Table-Top spiral Vegetable Cutter out for a spin.  It was really easy, and we set it up in just minutes.

Some of the features I thought were really cool include the easy-to-clean surfaces, the selection of blades that store inside the unit (and look like little pull-out drawers), as well as the cool suction cup design.

Just pick your blade (we chose thick spiral), wash and trim your produce, and you're set to push the veggie through the blades while you turn the handle.

Within minutes, we had a whole bowl full of curly zucchini noodles!

To create sauce, all you need is:

1 can of artichoke quarters in juice (not oil)
3 cloves of garlic, finely diced
2 tablespoons olive oil
1 cup chicken stock

Start by heating the oil and draining the artichoke hearts.  You can choose to dice them extra small before adding to the oil.  Then add the garlic.  Let it saute for a few minutes until the garlic is tender.

Add the chicken broth, and when it has started to simmer, you can add the noodles.

Cook the noodles in the sauce for about 3 minutes, or until tender.  If you like a thicker sauce, add a makeshift roux of a teaspoon of flour mixed with a tablespoon of water.  Serve immediately.

This was delicious!  My kids weren't fooled that it was actual pasta, but they ate it.  Next time, I think we'll do half zucchini noodles and half whole-wheat spaghetti.  This dish is low in fat and full of flavor!
