Jazzy Red Beans and Rice with Polish Sausage and Turnip Greens

Red beans and rice is one of our favorite meals to prepare. It's so easy, that my 11-year-old son can make it!  We add one additional ingredient to our best dish: turnip greens (but you can add any green from kale to spinach to bok choy)!  We grow the turnips just for the greens, pulling them from the garden right before cooking. They add a delicious cabbage flavor to any meal!

Prepare this garlicky red beans and rice dish with a special "green" ingredient!


To make this easy dish, you'll need:

  • One pound polish sausage (or a whole link), sliced into rounds
  • 1 cup chopped, rinse fresh turnip greens or other healthy green (use frozen if you don't have fresh)
  • 5 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 3 cans red beans (juice reserved from one)
  • 4 cups jasmine/basmati rice
  • salt and pepper to taste
Heat the olive oil in a skillet on medium high heat.  Add the garlic, stirring constantly for 1 minute. Add the greens and sausage, cooking for 2-3 minutes or until the sausage is slightly browned.  Add the beans (including liquid from one can; drain the rest), and simmer for 10 minutes.  Turn to low heat until time to serve.

Meanwhile, cook the rice according to the directions.  Add the rice to the bean mixture, salting to taste.  Serve hot!
