I love this time of year! And while I'm not big on all the "pumpkin spice" flavors that are artificially imposed on some more common foods, I LOVE baking with pumpkin! These muffins have all the flavor you'd expect from a fall baked good, with the added extra surprised of a caramelized butterscotch chip that melts on the bottom!
To make these, you'll need:
Start by mixing the flour, sugar, baking powder, salt and spice in a bowl. Slowly add in the egg, milk, pumpkin, and oil, mixing until just combined. Stir in the chips gently. Pour into a greased muffin tin or use the silicone Wilton baking cups for a no-mess and easy-to-remove muffin! Bake for 20 minutes at 400 degrees.
Serve warm or freeze for up to 1 month to serve on busy school mornings!
