Mini Chocolate-Dipped Holiday Rice Krispies Treats Recipe and #Treats4Toys Giveaway

It's officially holiday baking time! I'm usually so excited during this time of year, but we are in the middle of a home remodel, and I have been without my trusty oven. So what can a busy mom make that's budget-friendly, doesn't require hours of prep or baking, and can be made without the oven?

Kellogg’s® Rice Krispies® Treats!

I'm a big fan of these treats, not just because they are practically guaranteed  to never fail, but you can customize them in so many ways.  We decided to make some mini Rice Krispies Treats and dip them in chocolate, before rolling them in a variety of holidays candy decorations. They make the perfect party treat, as they are bite-sized and ready to delight guests of all ages!

Here are the complete directions for this treat:

You'll need:
  • 3 tablespoons butter
  • 1 package (10 oz., about 40) JET-PUFFED Marshmallows
  • OR
  • 4 cups JET-PUFFED Miniature Marshmallows
  • 6 cups Kellogg's® Rice Krispies® cereal
  • Chocolate almond bark squares for the dipping
  • Assorted holiday sprinkles
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 1-inch squares.

Prepare your chocolate "dipping" sauce by doing the following: Fill a mini slow cooker with chocolate almond bark squares. (Squares should be broken apart.) If your cooker has a temperature setting, high works just fine. Continually stir the chocolate squares as they start to melt.

While the chocolate is hot and has a glossy appearance, carefully dip the Rice Krispies Treats in and pull out immediately. Roll the chocolate end in a variety or sprinkles or edible baking glitter and shake off excess. Immediately set on a cookie sheet lined with parchment paper.

After all the treats are done, place the entire tray in the fridge for 10-15 minutes, or until your chocolate has fully set.  You can choose to serve immediately, or place into a plastic storage container. You can store these in the fridge for 1-2 days before serving.

This is a very fun project to do with the kids. While I'll handle the hot chocolate dipping, they love to roll the treats into the sprinkles!
