It's happening, people! Zucchini is starting to arrive daily, giving my family a yummy, versatile veggie to incorporate into every single meal (and even a few desserts.) We have already enjoyed zucchini fritters, Italian Scalloped Zucchini, and a nice stew with it added in, but my all-time favorite way to eat it was this quick foil packet recipe from my husband.
To make it, you'll need the following ingredients:
Grill on your outdoor grill for 15 minutes, turning the packet over halfway through. Check it a bit every now and again to make sure it doesn't burn. We cooked ours at about 350 heat. (You can also do this in an oven!)
This is a great side dish, as the bottom veggies get very soft and fluffy, while the top veggies stay a little firm. I like to mix the "fluffy" veggies together before serving, and my kids never can tell the potatoes from the green stuff. They eat it all!
Experiment with different flavors. We like cayenne, paprika, green or red peppers, spinach, or even finishing of with a little grated cheese or fresh tomatoes upon serving! Yum!
