Back-to-School Family Meal: Chunky Garden Slow Cooker Chili with Sirloin

It's here! We are full into our fall classes, and I'm so excited to see all the fun things my kids will be learning in our homeschool this year. While I have been blessed to be able to enroll my older kids in a few online courses taught by some fantastic teachers, the meals weren't something I could easily outsource.

Thankfully, my husband Sam saved the day (and the next day) with this slow-cooker chili that can cook overnight while you sleep, then will be ready to set to "warm" until you eat it for lunch. We had a great time allowing the kids to top their chili with a variety of shredded cheese, Mexican Crema, black olives, and green onions. Saltines make it a meal, too!

To make this delightful chunky garden slow cooker chili with sirloin, you'll need the following ingredients. Use what you have in your garden, and get the extras at your local store:
  • 1 46 oz. can 100% tomato juice
  • 3 large ripe tomatoes or 1 28 oz. can of crushed tomatoes
  • 1 small white onion, chopped
  • 1 large green peppers, chopped
  • 6 oz. sirloin steak, cooked and chopped
  • 3 cans chili beans
  • 1 package chili seasoning packet
  • 1 jalepeno pepper, whole (optional -- you'll remove this after cooking)
Combine all the ingredients into the slow cooker. Cook on low for 8 hours, then turn to warm until serving.
